Chicken Tom Kha Gai Soup

This soup is the most popular Thai soup, it’s a lovely warming dish that you will find quite unlike anything else. It has a lovely rich coconut flavour, and is sure to bring the whole family round for more. This recipe serves 3 hungry people or 4 as a starter to a Thai dish like a Green Curry.  I make this all the time because I love the flavours!

Ingredients

1  Can of Coconut Milk

50g Galangal  (preferably fresh, non dried)

3tsp Lemon Juice

2tsp Sugar

2 Large Chicken Breasts

4-5 Kaffir Lime Leaves

2 Sticks of Lemongrass

3-4 tsp Fish Sauce

1 Large handful of fresh Coriander

2-3 Birds Eye Chillies or to taste

Half a pack of button mushrooms
